A Twist on Tradition: Savory Cheesecake with Crispy Crackers

of La Mole Crispy Crackers

100 gr

of melted butter

400 gr

of cream cheese

100 gr

of soft goat cheese



salt and pepper to taste

herbs of your choice

of cherry tomatoes

of arugula

olives, capers, or other vegetables for decoration



Prepare the base
Crush La Mole Crispy Crackers until you have a fine consistency. You can do this in a food processor or by placing them in a bag and rolling over it with a rolling pin. Mix the crushed crackers with the melted butter until the mixture is homogeneous. Press the cracker mixture into the bottom of a springform pan (recommended diameter 22-24 cm) lined with parchment paper, creating a uniform base. Chill in the refrigerator to set for about 30 minutes.


Prepare the Filling
In a bowl, mix the cream cheese with the goat cheese, eggs, salt, pepper, and finely chopped herbs until smooth and well combined. Pour the filling over the chilled cracker base and smooth the top with a spatula.


Bake in a preheated oven at 180°C (356°F) for about 40-45 minutes, or until the top is golden and the center slightly wobbles. Allow to cool completely in the refrigerator for at least 4 hours, preferably overnight.


Prepare the Topping
Just before serving, halve the cherry tomatoes and season them with olive oil, salt, and pepper. Remove the cheesecake from the refrigerator, release the springform pan, and transfer the cheesecake to a serving plate. Cover the top with fresh arugula, seasoned cherry tomatoes, and, if you like, decorate with olives, capers, or other vegetables of your choice.


Cut into slices and serve the savory cheesecake as an appetizer or part of a buffet. Notes: You can vary the cheese according to your taste, using for example salted ricotta or pecorino for a more pronounced flavor.


Season with salt to taste. Pulse a few more times to mix in the seasoning.


Add layers of smoked salmon, prosciutto, or grilled vegetables between the base and the filling for an even richer variation.
