Preheat the Oven
Preheat your oven to 180°C (350°F).

Wash the peaches and cut them in half. Remove the pits and scoop out a small amount of flesh from the center to create a cavity for the filling. Reserve the scooped-out peach flesh in a bowl.

Add the crushed La Mole Amaretti cookies, chopped dark chocolate, sugar, melted butter, egg yolk, vanilla extract, and a pinch of salt in the bowl with the reserved peach flesh. Mix well until all ingredients are combined. If desired, add a splash of Amaretto liqueur for extra flavor.
